Zucchini Beef Cube Steak

 

Serving Size: 4

 

Ingredients:

            4 beef cube steaks

            2 large garlic cloves, minced

            2 teaspoons basil

            salt and pepper, to taste

            2 teaspoon olive oil

            1 large zucchini, sliced and quartered

            1 small tomato, diced

            1 small white onion, diced

           

Directions:

  1. In medium mixing bowl combine basil, salt, and pepper. Season each side of the cube steak with mixture.
  2. In a large skillet pour olive oil in over medium heat. Add garlic, let cook for 1 minute. Place beef cube steaks in skillet. Braise for 3 minutes on each side. Remove from skillet and set aside.
  3. Add zucchini and onion, cook until both begin to soften. Stir in tomatoes.
  4. Place cube steaks back in skillet and cook for an additional 2 minutes. Serve with mashed potatoes.

Easy Beef Cube Steak Recipe

Ingredients:

            4 Beef Cube Steaks

            1 cup beef broth

            8 oz. can mushroom soup

            1 small onion, diced

            1 tablespoon garlic powder

            2 tablespoons olive oil

            salt and pepper, to taste

 

Directions:

  1. Preheat oven to 350 degrees F.
  2. Sprinkle cube steaks with garlic powder and desired amount of salt and pepper. Set aside.
  3. In a medium mixing bowl add beef broth and mushroom soup.
  4. In large skillet add olive oil over medium-high heat. Add onions and sauté until tender. Then add steaks, brown on both sides.
  5. Place onions and steak in a 13 x 9 baking dish. Pour in broth/soup mixture.
  6. Cover dish with foil and bake for 45 minutes.

Orange Braised Cube Steak

Ingredients:

4 cube steaks
salt and pepper, to taste
2 tablespoons olive oil
2 garlic cloves, minced
1 large onion, diced
1 teaspoon orange zest
½ cup beef broth, low-sodium
2 ½ teaspoons soy sauce

Directions:

1. Season cube steaks with salt and pepper.
2. In a large skillet heat olive oil over high heat. Place cube steaks in skillet and brown on each side. Transfer to plate and set aside.
3. Add onions to the cube steak drippings in skillet. Cook until onions are soft. Then add orange zest and garlic, cook for 1 minute. Stir in beef broth, soy sauce, and cube steaks. Cook, uncovered, until steaks are cook to desired tenderness.

Ingredients:

            4 beef cube steaks

            5 tablespoons all-purpose flour

            ½ teaspoon salt

            ½ teaspoon pepper

            2 eggs

            2 tablespoons milk

            ½ cup Italian seasoned bread crumbs

            1 cup grated parmesan cheese

            4 slices mozzarella cheese

            2 teaspoons dried basil

            3 tablespoons olive oil

            15 oz. can tomato sauce

            2 teaspoons sugar

            2 teaspoons dried oregano

            1 teaspoon garlic powder

           

Directions:

  1. Preheat oven to 350 degrees F.
  2. In a small mixing bowl combine flour, salt and pepper. In a second bowl combine eggs and milk, whisk until smooth. In a third bowl combine bread crumbs, ½ cup of parmesan cheese and basil.
  3. In a large skillet add olive oil over medium-high heat. Coat cube steaks with flour mixture, then dip in egg mixture and coat again in bread crumb mixture. Place steaks in skillet, brown on both sides and remove quickly.
  4. Transfer to 13 x 9 greased glass baking dish.
  5. In another bowl combine tomato sauce, sugar, 1 teaspoon of oregano and garlic powder. Pour this mixture over the steaks. Place in oven and let bake 25 minutes.
  6. Place a slice of mozzarella on each steak. Add remaining parmesan and oregano on top. Bake for additional 5 minutes, until cheese is melted.

Beef Cube Steak with Mushrooms and Red Wine

Ingredients:

            4 beef cube steaks

            4 tablespoons butter

            2 tablespoons shallots, minced

            8 oz. fresh mushrooms, sliced

            2 garlic cloves, minced

            ¼ teaspoon fresh thyme

            ¾ cup dry red wine

            ¾ cup beef broth

            salt and pepper

            ½ cup all-purpose flour

            2 tablespoons olive oil

 

Directions:

  1. In a medium sauce pan melt butter. Add shallots and sauté for 1 minute.
  2. Add mushrooms, garlic, and fresh thyme, sauté until mushrooms are tender. Add half of the flour and stir. Pour in red wine and beef broth and a little pepper. Add salt as preferred.
  3. Increase the heat until contents comes to a boil. Then reduce heat and let simmer for 10 to 15 minutes.
  4. In a small mixing bowl combine the rest of the all-purpose flour and desired amount of salt and pepper. Coat beef cube steaks with flour mixture and set aside.
  5. In a large skillet add olive oil over medium-high heat. Place coated cube steaks in the hot oil. Brown on each side.
  6. Pour mushroom and wine sauce over the steaks, cover and simmer for 10 minutes. Do not overcook.

Ingredients:

  • 4 beef cube steaks           
  • ¼ cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 10 oz. can Rotel diced tomatoes
  • 1 15 oz. can tomato sauce
  • 1 medium onion, thinly diced
  • 1 teaspoon Italian seasoning

 Directions:

  1. In medium mixing bowl combine flour, salt, and pepper. Coat steaks and set aside.
  2. In a large skillet heat olive oil over medium-high heat. Brown steaks, less than a minute on each side.
  3. Reduce heat. Add diced tomatoes, tomato sauce, onions, and Italian seasoning. Cover and simmer for 30 minutes.
  4. Remove lid and cook for additional 10 minutes.
